Wholemel Loaf - Recipe

Ingredients:

675g (1and half lb) wholemeal flour
15g (1and half oz) lard
1x15ml (1 tbsp) castor sugar
15g (1/2oz) dried yeast
450ml (3/4pt) water, hand hot
2x 5ml (2 tsp) salt

How to make:

 1.Place flour in a non metal bowl, heat for 1 minute on HIGH. Rub lard into flour.

2.Sprinkle 1x5ml ( 1 tsp ) sugar and yeast into 150ml (1/4pt ) of water. leave in a warm place for 10-15 minutes until the mixture is frothy. pour remaining sugar and salt into water. Add to flour with yeast mixture. Knead for 5minutes until dough is smooth and elastic.          
Cover dough with polythene bag, leave in a warm place for 30 minutes or until doubled in size or use proof cycle (40 degree celsius , 30 minutes ). Knead for a further 5 minutes, divide into two. Shape and place in two greased 1kg (2 lb ) heat proof glass loaf dish. Leave in a warm place until dough has doubled in size. place two dishes on low rack. Bake for 11-15 minutes in SIMUL (DUAL) CONVEC (on 220 degree celsius microwave MED- LOW).
