Ingredients:600g (1 lb 5oz) frozen raspberries
600g (1 lb 5oz) castor sugar
1 x 15m1 (1 tbsp) lemon juice
How to make:1. Place frozen raspberries in a 2-litre (4pt) casserole. Cook on HIGH until thawed, 2-3 minutes. Stir in sugar and lemon juice. Cook on HIGH until mixture boils, 7-9 minutes stirring after half the cooking time.
2. Microwave on HIGH until mixture comes to a rolling boil, 3-3 minutes. Microwave on HIGH to continue boiling, 1 minute. Pour into prepared jars, seal and refrigerate.
